Meatless Monday: Jamaican Rice and Peas (beans)

Give me beans and rice on any day and I’m a happy camper.  This week’s Meatless Monday recipe is a traditional Jamaican dish with a few modifications.  Enjoy!

Ingredients

3 cups of rice (long-grain brown rice is preferable)

Water according to rice instructions

1 can cooked red beans (fresh is ok, just soak overnight and rinse in am before using)

5 cloves garlic, minced

1 jalapeno pepper (can use a chili pepper if that’s all you’ve got)

3 scallions

1 can coconut milk

1 teaspoon sea salt

black pepper to taste

2 sprigs fresh thyme or 2 teaspoons dried thyme

Preparation

Bring water to a boil and add garlic, rice, beans, coconut milk, salt, pepper and thyme

Crush the scallions (do not chop) and add to the mix

Add the jalapeno pepper (do not chop)

Bring to a second boil.  Reduce heat.  Cover and cook for 20 – 40 minutes or until liquid is absorbed

That’s it…quick and easy!
